As per the mod election page, 3 moderators will be elected. The previous pro-tem team has the option of standing as moderators, but it looks like Undo's the only one of the old mods standing. He'll need to be voted in as per any other mod.

You don't need to make a third choice. Your first two choices will be counted, in that order, don't worry. The long-term solution is to post more answers and questions, gain reputation, do reviews, gain moderation experience, and nominate yourself next time :-)

Someone posts an answer of the form “if … then product A, if … then product B”. Another user edits the answer down to product A and says to post a separate answer for product B, citing this meta answer. The answerer edits the answer back. How do you settle this?

Well in this case its moot. With two choices and one place, whoever gets more first choices is likely to win. STV gets interesting when there's two or more places with sufficiently high participation in the election, but here... it doesn't quite matter.
